Nancy Berkoff, R.D., Ed.D., is a registered dietician, food technologist, and certified chef. She divides her time between teaching nutrition and culinary arts, food writing, and consulting. Anna M. Barton holds a degree in biological sciences. Her background includes work in biomedical research laboratories, freelance writing, and medical transcription.
